Gluten Free Cereal Bar

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup pecans, chopped
  • 1 cup sunflower or pumpkin seeds (pepitas)
  • ½ cup golden flaxseed
  • ½ cup sliced almonds
  • ½ cup wheat germ
  • 1 cup unsweetened coconut shavings
  • 1 cup dried blueberries, or peaches
  • ¾ cup pure maple syrup
  • cup light brown sugar
  • 3 tablespoons virgin coconut oil
  • teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 large egg white, beaten

Preparation

  • Preheat oven to 375°. Stir together and toast oats, pecans, sunflower seeds, coconut, flax seed, and almonds on a shallow baking sheet.
  • Bake until coconut is lightly golden brown, 10–15 minutes. Stir occasionally. Let cool.
  • Reduce oven temperature to 325°. Pour mixture into a large bowl and stir in wheat germ and Dried fruit.
  • In a small saucepan, bring maple syrup, brown sugar, coconut oil, vanilla, and salt to a boil.
  • Stir occasionally until the sugar has dissolved.
  • Let cool 15 minutes, then whisk in egg white. Pour over oat mixture and stir until coated.
  • Line a 13 x 9″ pan with parchment paper.
  • Spread the mixture evenly into pan and bake for 40-50 minutes, until golden brown.
  • Do not let cool completely, only about 20-30 minutes, then cut into bars.
